The Boulder County Health Department will provide you with a copy of the "Colorado Retail Food Establishment Rules and Regulations" from the Colorado Department of Public Health and Environment. Your business must be inspected prior to opening or with a change of ownership. If you sign a lease for a food related business or a contract to purchase a food related business, the lease or purchase contract should be contingent upon the physical facilities and equipment meeting health codes.
